The estate Bicoca, run by the brothers Francesco and Silvio Ascenzi, stretches for about 900 hectares in the territory of the town of Viterbo.
This area jealously preserves the traditions of Maremma, the typical landscapes of a gently rolling plane furrowed by streams of water which during centuries modelled the ground and created a many little valleys along their margins.
The estate is constituted of woods and pastures for about 300 hectares, kingdom of cows and maremman horses brood in a natural state, in competition with wild boars, hares, pheasants and woodcocks; the remaining part is sowable land, cultivated with cereals, fodder and vegetables, there is also an olive field of one thousand olive trees which produces olive oil, soon to be recognized the title of “olio extravergine della Tuscia DOP”.
Besides the already mentioned cattle, there is also a rigorously selected breeding of about one hundred cows of the Frisone Italiane race, for the production of high quality milk.
